Mixologist


Born in 1983, Shingo Kawai is a mixologist, currently lives in Nagoya, Japan.

BAR chord was established in the year of 2018. Located 5 minutes away from the heart of Nagoya, inspired by speakeasy bars that emerged during Prohibition in the US in the 1920s, as well as the Japanese arts and culture movements in the Taishō era, Kawai is dedicated to creating modern twists on classic cocktails and original cocktails using homemade ingredients, bitters, falernum, orgeat and such, based on mixology and contemporary approaches like distillation and extraction.

Previously collaborations included cocktail pairings for LaNuit Fragrance (Tokyo, 2022); an ongoing signature cocktail series for MOGANA, Kyoto; cocktail pairings for MUGA’s exhibition The Colors of My Maze (Kyoto, 2021). Meanwhile in 2013 and 2021 Kawai was awarded the TOP 50 bartenders in Japan by Diageo World Class, in 2023, he advanced to the position of a top 10 finalist in the very same competition.

和音を意味するchord – 1920年代·禁酒法時代のアメリカから生まれたスピークイージースタイルに、同時期·大正時代の日本文化·芸術が織り込まれた店内では、様々な自家製材料を使用したクラフトカクテルとブランデーやジン、ウイスキーなどのハードリカーなどをお楽しみいただけます。 

蒸留や抽出などのミクソロジー / 現代的なアプローチのもと、クラシックカクテルのモダンツイストや、自家製のビターズやファレナム、オルジェー等を使用したオリジナルカクテルの制作をライフワークにしています。 

これまでのプロデュース・コラボレーションに、La Nuit Fragrance ペアリングカクテル(東京 / 2022)、MOGANA シグジニチャーカクテル (京都 / 2021 -)、The Colors of My Maze ペアリングカクテル(京都 / 2021)など。また、2013 / 2021年 Diageo World Class TOP50、 2023年 TOP10。
